Healthy Fish Pie
Tuck in to this hearty and healthy fish pie. Simple to make totally, comforting and a meal that the whole family will love.

Servings: 6 people
- 1 tbsp skimmed milk
- 1 tbsp corn flour
- 800 g potatoes
- 220 g salmon fillets
- 200 g smoked haddock fillets
- 100 g king prawns
- 250 ml skimmed milk
- 4 tbsp fresh parsley chopped
- 4 tbsp light cream cheese
- 1 Leek sliced
- 4 tbsp Sweetcorn
- 1 tbsp Dijon Mustard
- 2 tbsp fresh Dill chopped
Mix the 1tbsp of milk and cornflour together and set aside.
Add the potatoes to a pan of boiling water and simmer for 10-12 minutes.
Put 250ml milk in a pan and put the salmon, haddock and parsley in to it. Bring the milk to the boil and then simmer for 4 minutes.
Using a slotted spoon, lift the fish out and place in a casserole dish and put the prawns on top and mix round so the fish flakes up.
Stir the cornflour mix and add to the milk with the sweetcorn, leeks, cream cheese and a pinch of sea salt and black pepper to the milk
Drain the potatoes and mash them with the Dijon mustard and dill.
Pour the milk mixture over the fish in the casserole dish and stir, then top with the mashed potatoes.
Put in the oven at 200C/390F for 45 minutes.
