Healthy Fish Pie

Tuck in to this hearty and healthy fish pie. Simple to make totally, comforting and a meal that the whole family will love.

Ingredients

  • 1 tbsp skimmed milk
  • 1 tbsp corn flour
  • 800 g potatoes
  • 220 g salmon fillets
  • 200 g smoked haddock fillets
  • 100 g king prawns
  • 250 ml skimmed milk
  • 4 tbsp fresh parsley chopped
  • 4 tbsp light cream cheese
  • 1 Leek sliced
  • 4 tbsp Sweetcorn
  • 1 tbsp Dijon Mustard
  • 2 tbsp fresh Dill chopped

Instructions

  • Mix the 1tbsp of milk and cornflour together and set aside.
  • Add the potatoes to a pan of boiling water and simmer for 10-12 minutes.
  • Put 250ml milk in a pan and put the salmon, haddock and parsley in to it. Bring the milk to the boil and then simmer for 4 minutes.
  • Using a slotted spoon, lift the fish out and place in a casserole dish and put the prawns on top and mix round so the fish flakes up.
  • Stir the cornflour mix and add to the milk with the sweetcorn, leeks, cream cheese and a pinch of sea salt and black pepper to the milk
  • Drain the potatoes and mash them with the Dijon mustard and dill.
  • Pour the milk mixture over the fish in the casserole dish and stir, then top with the mashed potatoes.
  • Put in the oven at 200C/390F for 45 minutes.
