Chicken Pad Thai
This easy and authentic Chicken Pad Thai is spicy and healthy. This homemade version will rival any Thai restaurant meal.

Servings: 2 people
- 150 g chicken breast
- 200 g head of broccoli cut into small florretes
- 2 garlic cloves chopped
- 1 red bell peppers thinly sliced
- 1 tbsp honey
- 2 tbsp nut butter (we used almond butter)
- 2 tsp sesame oil (or olive oil)
- 1 tbsp chili sauce
- 1 tbsp fish sauce
- 60 ml water
- 100 g soba noodles cooked
- 4 spring onions (scallions) sliced
- 2 limes quartered (for serving)
- 1 tbsp chilli flakes
- 0.5 tbsp olive oil
Cook the chicken breast under the grill for 20 minutes, turning halfway through.
While the chicken is grilling, cook the noodles to the pack instructions and boil the broccoli until al dente.
In a blender, combine the garlic, honey, almond butter, sesame oil, chilli sauce, fish sauce and water and puree until smooth and set aside.
Heat the olive oil a large pan and add the cooked chicken and pepper slices and heat for 5 minutes.
Add the sauce, cooked noodles and broccoli and cook for a further 2 minutes.
Serve with spring onions/scallions, chilli flakes and lime wedges.
