Chicken Pad Thai

This easy and authentic Chicken Pad Thai is spicy and healthy. This homemade version will rival any Thai restaurant meal.

  • 150 g chicken breast
  • 200 g head of broccoli cut into small florretes
  • 2 garlic cloves chopped
  • 1 red bell peppers thinly sliced
  • 1 tbsp honey
  • 2 tbsp nut butter (we used almond butter)
  • 2 tsp sesame oil (or olive oil)
  • 1 tbsp chili sauce
  • 1 tbsp fish sauce
  • 60 ml water
  • 100 g soba noodles cooked
  • 4 spring onions (scallions) sliced
  • 2 limes quartered (for serving)
  • 1 tbsp chilli flakes
  • 0.5 tbsp olive oil


  • Cook the chicken breast under the grill for 20 minutes, turning halfway through.
  • While the chicken is grilling, cook the noodles to the pack instructions and boil the broccoli until al dente.
  • In a blender, combine the garlic, honey, almond butter, sesame oil, chilli sauce, fish sauce and water and puree until smooth and set aside.
  • Heat the olive oil a large pan and add the cooked chicken and pepper slices and heat for 5 minutes.
  • Add the sauce, cooked noodles and broccoli and cook for a further 2 minutes.
  •  Serve with spring onions/scallions, chilli flakes and lime wedges.
