Huevos Rancheros

Ingredients

  • 2 Old El Paso Tortillas
  • 2 Eggs
  • 2 tbsps refried beans
  • 4 tbsp Salsa
  • 0.5 avocado diced
  • 20 g light feta crumbled
  • 0.5 tbsp olive oil

Instructions

  • Add the oil to a pan and then crack in 2 eggs. Cook for 3 minutes, or until it is cooked to your liking.
  • Spread a tbsp of refried beans on to each tortilla and then top with salsa, the cooked egg and sprinkle over the avocado and feta.
