Ingredients

  • 1 tbsp olive oil
  • 2 carrots peeled and diced
  • 1 celery stalk diced
  • 1 small onion diced
  • 4 mushrooms sliced
  • 2 garlic cloves crushed
  • 30 g fresh ginger grated
  • 1000 ml chicken stock
  • 1 lime (juice only)
  • 2 tbsp fresh coriander (cilantro) chopped
  • 150 g cooked chicken breast shredded
  • 50 g nest of wholewheat noodles

Instructions

  • Heat the oil in a large pan and then add the carrot, celery, onion and mushrooms and cook for 5 minutes.
  • Add the rest of the ingredients and simmer for 10 minutes.
