Tahini and Pomegranate dressing

This Tahini and Pomegranate dressing is a fruity Middle Eastern-inspired dressing that is perfect for salad, couscous, rice, chicken of fish.

Ingredients

  • 1 tbsp olive oil
  • 2 tbsp cider vinegar
  • 2 tbsp lemon juice
  • 1 tsp tahini
  • 2 garlic cloves crushed
  • 0.5 tsp red chilli flakes
  • 0.5 pomegranate (juice and seeds only)
  • Sea salt and black pepper

Instructions

  • In a bowl, squeeze a little of the juice out of the pomegranate half and then use a spoon to hit the pomegranate to get all the seeds out. Add them to the bowl with the juice.
  • Add the rest of the ingredients and stir well. You can put it all in a salad dressing bottle and sake it to make sure it is mixed well.
