Instructions
Preheat your oven to 200°C/180°C(fan)/400°F/Gas 6.
Press a tortilla circle down into a muffin tin. Fill with chopped spinach and a tablespoon of Easy Tomato Pasta Sauce.
Top with grated cheese and dried oregano.
Put into the oven for 10-12 minutes, until the cheese goes bubbly.
Notes
When cutting out the tortilla circles, you want to make sure they are big enough to come over the top of your muffin tin holes.
Try not to over stuff the cups with filling. You don't want them to be so heavy that everything falls out of the bottom.
These will keep in the fridge in an air tight container for up to 3 days.
To make them vegan, make sure your tortillas are vegan, use veggie fillings and a good, melty vegan cheese alternative.
