Just a quick recipe for you all today. I know it is a bit of a contrast from yesterday’s warm and comforting soup, but that is just how we roll in the HHH kitchen. Yes, I did just say “that is how we roll”. I am so uncool. It is Taco Tuesday and I am using that to mean I can post any kind of slightly Mexican related recipe.

I actually took these photos last summer, with my old camera, but I was having a good sort through old memories cards and came across this and remembered how delicious it was, so I couldn’t not share it with you all. I also found some photos from 3 Christmas’ ago, but I won’t share those with you as that really would be unseasonal and I don’t want to mention Christmas too early. I don’t want to be that person.
Whilst Christmas is very, very far away, summer isn’t. Summer to me means picnics in pretty parks and BBQ’s in my garden. We really didn’t make the most of having BBQ’s last year, so we will improve on it this year. When we did have a BBQ last year though, I made this. It was one of those moments where I thought “I haven’t made enough food” (I had. I always have) and I needed to make something else quick. This was made from ingredients I already had in the kitchen and took under 5 minutes to cook. I give to you, sweetcorn salsa.
Ingredients – Serves 4
– 1 tin (300g) sweetcorn, drained
– 1 red pepper, diced
– 6 tomatoes, diced
– Half a red onion, diced
– 10g coriander, finely chopped (you can use parsley instead)
– 2 jalapeño peppers, diced (less if you don’t like spicy)
– Juice of 1 lime
– 1 tbsp Olive oil
– 1 tbsp cider vinegar
– 2 garlic cloves, crushed
– Pinch of sea salt and black pepper
1) Put all of the ingredients in to a bowl and mix well.
