I am totally obsessed with these little tuna lettuce boats at the moment. They make a great lunch, snack or even a quick and lazy dinner. Can you believe that all of this is just 195 calories? It is also fat free and high in protein, meaning it would make a great post workout meal/snack.
Feel free to get creative when making this and swap vegetables for ones you have leftover or that are on offer, to make it budget friendly. You could use romaine or iceberg lettuce too, but I went with little gem as I like the smaller leaf.
If you don’t like the taste of Greek yoghurt, you can use mayo or mashed avocado instead, but it will change the nutritional value a lot. I find that adding the lemon juice to the Greek yoghurt mix takes away the yoghurt taste. If you can still taste it, and you don’t like the taste of it, add some chilli sauce.
Ingredients – Serves 1:
– 1 can of tuna
– 5 little gem lettuce leafs
– 2 tbsp 0% Total Greek yoghurt
– Juice of half a lemon
– Pinch of sea salt and black pepper
– Quarter of a red pepper, diced
– Quarter of a cucumber, diced
– 2 tbsp fresh chives, chopped
1) Mix together the tuna, Greek yoghurt, red pepper, cucumber, lemon juice, chives and salt and pepper and spoon in to the lettuce leaves.
