Ice cream cookie sandwiches have just been given a healthy make over by using banana “nice cream” (blended frozen bananas) and the new Maryland Cookie Thins. Under 100 calories for an overflowing cookie sandwich, with 3 different flavour options.
I challenge you to find anyone that doesn’t love ice cream cookie sandwiches, especially if they are under the age of 12. Well, I suppose what people might not like about them is all the calories and fat in them, with the average ice cream cookie sandwich coming in at around 300 calories, and going up to 600 calories sometimes. Not these ones! These have ALL the flavour, but under 100 calories each and that is partly due to using the new Maryland Cookie Thins, which are just 79 calories for 2.

Feeling a bit confused about what banana “nice cream” is? Well, it’s so easy and SO good that you will kick yourself for not having tried it already. It’s just chunks of frozen banana, blended until it becomes ice cream texture. It is super sweet and you could be fooled in to thinking it actually is ice cream. Especially when you add other flavours to it, like blended frozen strawberries, vanilla and cocoa powder to make a neapolitan mix. Kids absolutely love it too, and we always have some chunks of banana in the freezer to make this in a flash. Of course we always have some Maryland cookies in the cupboard too!
I honestly can’t rave enough about these cookies. We have always loved cookies and when you think cookies, you think Maryland. But they have really knocked it out of the park with these new Thins. Deliciously light and crispy cookies which comes in two flavours – Salted Caramel (YES!) and Milk & Dark Chocolate. They are the perfect little afternoon treat with a cup of coffee. They are a lighter sweet snack that isn’t too filling and you get to have 2 (yes, 2!) cookies for just 79 calories.
Biscuits and cookies are a bit of a weakness for me, but these mean that I don’t have give them up. They don’t add any artificial colours, sweeteners or preservatives, no hydrogenated fats and no GM ingredients. You can buy them in Tesco, Sainsbury’s, Waitrose and Iceland and guess what?! They are currently half price in Tesco at the moment, so go and stock up. You are going to be very sad if they run out.
The flavour options are almost endless when it comes to nice cream sandwiches, but we went with a classic Neapolitan. Mixing peanut butter in is another favourite and we are going to try mint choc chip and caramel next. The salted caramel Maryland Thins would go well with some caramel nice cream.
So, make a big batch of nice cream, put it on the table with some of these cookies and let everyone build there own. It does get a bit messy, especially when it comes to eating them, but that’s all part of the fun!
Neapolitan Banana Nice Cream Cookie Sandwiches
- 2 Bananas, cut in to chunks and frozen for 3 hours
- 4 Frozen strawberries
- 1 tbsp Cocoa powder
- 1 tsp Vanilla extract
- 20 Maryland Cookie Thins
- Put the frozen bananas in to a food processor and blend until smooth. You will need to stop it a couple of times and scrap the sides down and start blending again
- Take 2/3 of the mixture out. With the remaining mixture in the food processor, add the frozen strawberries and blend until smooth
- Halve the mixture that you took out and add vanilla extract to one and cocoa powder to another. You should now have 3 flavours of nice cream - vanilla, strawberry and chocolate
- Divide the nice cream between 10 Maryland Cookie Thins and then put another cookie on top to make a sandwich
