Today is the first day of Autumn. WOO HOO! What better way to celebrate than breaking out the slow cooker and making some of this delicious balsamic chicken.

I really, really. REALLY (honestly, really) love Autumn. The crisp mornings, the colder nights, the hot drinks, the comforting foods and the clothes. Oh the clothes! If I could wear fluffy hats and snuggly clothes all year round I would. I like cuddling up on the sofa with a blanket in the evening and I won’t even tell you how excited I get when it snows. Dave has to actually calm me down sometimes, as I just want to go outside and play in it. I swear I am an adult really.
Okay, on to the recipe. One of my favourite flavour combinations is balsamic vinegar, tomato and basil. Usually with cheese, but I left that out this time. It is such a fresh and full of flavour combination, that I decided to throw it all in the slow cooker with some chicken and see how it turned out. It turned out really well. We left the slow cooker on and when out to meet some friends and when we returned 4 hours later, the house smelt amazing. That has to be one of the best things about slow cooking, that smell it gradually creates throughout the day.
We served ours on top of spaghetti, but you could have so many different things with it – courgette (zuchinni) spaghetti, mashed potato, spaghetti squash, udon noodles, couscous and of course just a big pile of vegetables.
Ingredients – Serves 4:
– 4 chicken breasts (500g/17 oz)
– 1 tbsp oil
– A pinch of sea salt and black pepper
– 1 medium red onion, thinly sliced
– 6 tomatoes, diced
– 2 cloves of garlic, crushed
– 8 basil leaves, diced
– 60ml (quarter cup) of balsamic vinegar
1) Put the sliced onion at the bottom of the slow cooker and then put the chicken breasts on top and then add the olive oil and season with the salt and pepper.
2) Add the tomatoes, garlic and basil and then pour the balsamic vinegar on top.
3) Cook on low for 6 hours or high for 3 hours.
